For those who are not vegan, eggs are a good source of high-quality protein, which keeps you full for a long time.
This is not the only reason why eggs – especially as a classic breakfast egg – are popular. The per capita consumption of eggs in Germany in 2021 was 238 eggs.
At room temperature, eggs will keep for up to 28 days. If you subtract these days from the best before date on the carton, you will know when the eggs were laid.
Store eggs properly
An egg consists of eggshell, egg white and yolk. The shell protects the egg as best it can. However, this protection is not permanent.
Over time, the shell becomes porous and loses its resistance, allowing air and bacteria to penetrate.
Tip: Check each individual egg for cracks or other damage when you buy it. Also check the expiration date.
Although eggs are considered a delicate food, they do not generally need to be refrigerated, but many cartons will list a date by which the eggs should be refrigerated.
You should put eggs in the fridge at the latest after the best-before date has passed, so they can be kept for a maximum of two weeks longer.
If you are unsure whether raw eggs will still keep, there are two simple tests you can use to be on the safe side.
This is how you can tell if eggs are still fresh
If you shake the egg and it doesn’t make any noise, it’s still fresh. If you hear a kind of gurgle when you shake it, you can be sure that this egg is not quite as fresh anymore.
The so-called swim test is a good way to find out how fresh the eggs are. All you need is a glass of cold water.
Put the egg carefully into the water – if it sinks to the bottom and stays there, it’s fresh. If it stands up at the bottom of the glass, the egg is about a week old – you can enjoy it without hesitation.
However, if it floats on the surface, your egg is already older and should therefore be better disposed of.
As the egg gets older, the air bubble at the end of the egg gets bigger. Over time, the eggshell becomes permeable, allowing liquid to escape. Air gets inside, causing the egg to float on the surface.
If you have an egg that stays at the bottom of the glass but stands up, are you unsure if it is still edible? Can you open it in a bowl before preparing it and take a closer look at its appearance, shape and smell?
If the yolk is still in the middle – surrounded and protected by the egg white – then the egg is perfect. Note the yolk, which should be evenly convex.
On the other hand, if the egg is bad, you can tell by the fact that the egg white is no longer able to hold the yolk together. The consistency has changed a lot.
If a sulphurous smell spreads, you should also no longer eat the egg, but dispose of it immediately.
What are the consequences of a spoiled egg?
If you ate an egg that was already spoiled, the worst-case scenario is salmonella poisoning.
As a rule, the first symptoms can appear five to 72 hours after consumption: nausea, stomach pain, vomiting and diarrhea up to fever, and urine that has changed color is also a warning signal.
These symptoms can last for a few days. In order to avoid damage to your health, you should definitely speak to a doctor if you suspect salmonella poisoning.
