Winter minestrone

Healthy because…
Even in ancient Rome, soups were made from vegetables that the garden had to offer. With newer ingredients, it is now called Winter Minestrone. There are numerous vitamins and complex flavors in this vegetable stew. With this you strengthen your immune system spoon by spoon. The pasta filling also fills you up for a long time, so that no cravings occur until the next meal.


Onion, garlic, parsley root, turnip, carrot, leek

Peel and finely chop the garlic cloves and the onion. Peel and dice the remaining vegetables. Wash the leek and cut into thin slices.

Oil, bay leaves, vegetable broth, pasta

Heat the oil in a large saucepan. Sauté the onions and garlic until translucent, then fry the diced vegetables. Add the bay leaves and deglaze with the vegetable broth. Bring the soup to the boil and add the noodles. Simmer for 20 minutes. Stir in between.

cherry tomatoes, salt, pepper

Then quarter the cherry tomatoes, add to the soup and season with salt and pepper.

basil, parmesan

Finely chop the basil. Divide the soup between plates and sprinkle with some basil and grated parmesan.
