Waldorf salad with caramelized nuts

Waldorf salad consists mainly of celeriac. This means that the salad has a high vitamin content, but at the same time has only a few calories. The vegetables are also so valuable because they contain many minerals. Walnuts are also rich in vitamins and also provide valuable unsaturated fatty acids.

Roughly chop the walnut kernels. Melt the powdered sugar in the hot pan and add walnuts. Add a pinch of salt. Mix everything and caramelize. When the nuts are golden brown, remove them from the pan and let them cool on baking paper.

Celery, Apples, Lemon Juice

Clean and peel the celery and the apples, remove the core from the apples and grate both coarsely. Mix the lemon juice with a dash or two of sweetener and add to the celery and apple mixture.

Natural yoghurt, crème fraîche, salt, pepper, sweetener

Season the natural yoghurt and crème fraîche with salt, sweetener and pepper. Fold everything into the celery and apple mixture and stir well. Refrigerate until ready to eat.

Lettuce, caramelized walnuts

Serve the salad in portions and sprinkle the walnuts on top.
