Vegan leek cream soup with smoked tofu

Healthy because…
Leeks contain iron, calcium, magnesium and manganese as well as valuable A and B vitamins. The vegetables also have a positive effect on the intestinal flora. Tofu is low in calories but high in plant-based proteins.


What you need: pan, oil, smoked tofu or minced meat alternative

Mash the smoked tofu with a fork, fry in hot oil in a pan and set aside.

If using a ground beef alternative, fry it in the pan as well.

You will need: pot, oil, onion, leek

Cut the onion into fine cubes. Wash the leek and cut into rings. Then heat the oil in a saucepan and sauté the onions and leeks.

You will need: hand blender, vegetable broth, oat cream

Deglaze the leek and onion with the vegetable stock and simmer over medium heat until the vegetables are cooked. Then use a hand blender to grind to a creamy mass and fill up with the oat cream.

You will need: yeast flakes, salt, pepper, fried tofu

Stir the yeast flakes into the soup and season with salt and pepper. Then stir in the fried tofu and serve.
