Roasted Brussels sprouts with almond dressing

Brussels sprouts are a popular winter vegetable and, with their high vitamin C content, help to strengthen the immune system, especially during the cold season. The contained bitter substances also support the fat metabolism. The tart taste of the Brussels sprouts harmonises very well with the juicy pomegranate seeds and the fine almond aroma – simply delicious!


Brussels sprouts, olive oil, salt, pepper

Wash and halve the Brussels sprouts. Then pour some olive oil into an ovenproof dish and season with salt and pepper. Roast in the oven for 30 minutes.

Pine nuts, pomegranate, mint, parsley

Roast the pine nuts in a pan until golden brown. Meanwhile, peel the pomegranate and finely chop the herbs with a knife or pluck them by hand.

Almond butter, rapeseed oil, lemon, garlic, agave syrup, salt, pepper

Finely grate the garlic. Squeeze the juice from the lemon and mix with the remaining ingredients to form a creamy dressing.

Garnish the Brussels sprouts with the pomegranate seeds, the pine nuts, the dressing and the herbs and enjoy while still warm!
