Preparing new potatoes: That’s why you should remove green spots

Their skin is thin and the starch content is low: new potatoes are tasty. But green spots on the tubers should not be eaten, advises the consumer advice center in Mecklenburg-Western Pomerania. Because there is solanine in the shell.

The slightly toxic compound protects the potatoes in nature from predators. Solanine can also cause nausea, vomiting and diarrhea in humans. It is therefore better to only offer children peeled potatoes.

New potatoes: Prefer unbroken skin

In addition, the Federal Institute for Risk Assessment recommends eating new potatoes only with the skin on if it is fresh and undamaged. Better to remove green spots. New potatoes should also not be stored for long. If a potato dish tastes bitter, it is better not to eat it.

By the way: In Germany, the first new potatoes are harvested as early as mid-May – in the Palatinate and the Lüneburg Heath. Well-known varieties are Palatinate Krumbeere, Belana or Gala. They have a shorter growing time than regular ware potatoes.
