Kohlrabi carpaccio as a summer starter recipe

Not only is kohlrabi rich in vitamin C, but it also contains large amounts of niacin and folic acid. The crunchy tuber is also a supplier of iron, magnesium, potassium and calcium.



Peel the kohlrabi and cut or slice very finely. Then arrange them in a fan shape on a plate. Depending on the desired size of the slices, the kohlrabi can be halved before cutting.
