Creamy wild garlic and potato soup

Potatoes, shallots, wild garlic

Wash, peel and coarsely dice the potatoes. Peel and finely dice the shallots. Wash wild garlic and shake dry. Remove the tough stems and roughly chop the leaves.

Butter, shallots, broth, cream

Melt the butter in a saucepan and sauté the diced shallots until translucent. Add the potato pieces and sauté briefly. Pour in the broth and bring everything to a boil. Then stir in the cream and let the soup simmer for 20 minutes.

Wild garlic soup

Add the chopped wild garlic to the soup. Bring everything to the boil and finely puree with a hand blender. Season to taste with salt, pepper, nutmeg and lemon juice.
