Black salsify is a healthy and low-calorie vegetable for the cold season. They provide many vitamins and minerals and the fiber content is very high. The contained carbohydrate inulin maintains the intestinal flora and stimulates digestion. Here the black salsify is breaded with sesame and served with a fruity-spicy sauce.
Black salsify, lemon juice, salt, gloves if necessary
Wash and peel salsify. It is best to wear gloves. Then cook in salted water for 6 minutes. Drain the roots in a sieve.
Breadcrumbs, sesame, salt, pepper, flour, egg
Mix the breadcrumbs and sesame seeds in a soup bowl. Pour the flour into another soup bowl and whisk the eggs in the third. Season the salsify with salt and pepper. Then roll in flour, then in the beaten egg and finally in the crumb mixture.
Butter, frying pan, paper towels
Heat the clarified butter in a pan. Fry the sticks in hot fat for about 7 minutes. Then drain on kitchen paper.
Orange, lemon, grape juice, cinnamon stick, cloves, rosehip pulp, green peppercorns
In the meantime, wash the orange and lemon, peel thinly (to zest) and squeeze. Place juice and peels with cinnamon stick, cloves and grape juice in a saucepan. Bring to the boil and simmer until the stock has reduced by a third. Pour the broth through a sieve and refine with rosehip pulp and peppercorns.
Arrange black salsify sticks on a plate and serve the sauce in a small bowl.
