Beetroot casserole with potatoes and minced meat

Healthy because…
Beetroot is very nutritious, but has few calories. The vegetables also provide minerals such as iron, potassium, calcium, magnesium and phosphorus as well as numerous vitamins and folic acid. Potatoes also bring secondary plant substances and fiber with them. The ground beef joins the other ingredients in providing additional zinc. Onions, garlic, oil, ground beef, salt, pepper, ras el hanout

Peel and finely chop the onions and garlic. Heat 1 tbsp oil in a pan and fry the minced meat until crumbly. Add onion and garlic cubes and fry. Sprinkle with a pinch of the spices and stir well.

Potatoes, beets

Peel potatoes and beetroot. Cut both vegetables into thin slices.

Whisk together the ricotta, milk and eggs and season. Wash the tarragon and parsley, shake dry and chop finely. Leave some parsley for sprinkling. Fold in the chopped herbs and half of the grated cheese.

Preheat the oven to 200 degrees top/bottom heat. 180 degrees is enough for circulating air. Grease the casserole dish with the remaining oil.

All ingredients

Layer the potato slices, beetroot slices and the minced meat mixture alternately with the ricotta egg cream and vegetable broth. Grate the remaining cheese and sprinkle over the casserole. Bake in the oven for 40 minutes.

After baking, sprinkle the casserole with the remaining parsley and serve.
