Our delicious banana and carrot cake is made entirely without refined sugar, butter and wheat flour. But it is full of vitamins, healthy fats and proteins.
Wholemeal spelled flour, ground almonds, baking powder, cinnamon
Place the dry ingredients in a large bowl and stir.
Carrots, bananas, eggs, salt, apple pulp, dry ingredients
Grate carrots. Set aside a small amount. Mash the bananas with a fork and mix into a paste. Beat the eggs with a pinch of salt until fluffy. Add applesauce. Fold everything into the mixed dry ingredients and mix.
Finally, stir the sliced almonds into the batter. Leave a few for final decoration.
Dough, baking tin, baking paper, wooden sticks
Pour the batter into a greased or parchment-lined tin. Place the cake in the oven at 200 degrees top/bottom heat for 50 – 60 minutes. Use a wooden skewer to check if the dough is still sticking. If not, take the cake out and let it cool.
Almond butter, remaining almonds and carrots
For the topping, drizzle a small spoonful of almond butter over the cake. Scatter the remaining almonds and carrots evenly on top.
