milk, yeast, sugar

Slightly warm the milk in a saucepan. It is important that it is not too hot, otherwise the yeast will no longer be able to rise. Take a large bowl and dissolve the yeast in it with the warm milk and sugar.

flour, eggs, salt

Now add the flour and the salt and mix everything together. Beat in the eggs and knead the dough until smooth, about 5-10 minutes.

Cover the bowl with the dough with a kitchen towel and let it rise in a warm place for an hour. The dough should have roughly doubled in size.

Cooking spoon, baking paper, baking sheet

If the dough is a bit too sticky, carefully add a little flour and knead everything again. Then divide the dough into 12 equal pieces and shape them into balls. Place them on a baking tray lined with baking paper and use a wooden spoon to make the typical round hole in the middle. Circular movements help.

water, stove

Cover the bagels again with a kitchen towel and let them rise for another 10 minutes. Preheat the oven to 200°C. Roughly wet the bagels with a little water before putting them in the oven for 20 to 25 minutes.

Avocado, Salt, Lemon Juice, Cream Cheese, Arugula

If the bagels are nice and golden brown on top, they can be taken out of the oven and served after a short cooling time. Cut the bagel open and top one side with avocado if you like. Refine with a little salt and lemon juice. Spread cream cheese on the other side, spread arugula on top and the bagel is ready to be enjoyed.
