Cover the bagels again with a kitchen towel and let them rise for another 10 minutes. Preheat the oven to 200°C. Roughly wet the bagels with a little water before putting them in the oven for 20 to 25 minutes.

If the bagels are nice and golden brown on top, they can be taken out of the oven and served after a short cooling time. Cut the bagel open and top one side with avocado if you like.
