Asparagus is healthy – under a puff pastry cover, it becomes a very special meal. You can really impress your family or guests with this.
Butter, Flour, Milk, Cream Cheese, Salt, Pepper, Nutmeg
For the sauce: Melt the butter in a saucepan and sprinkle the flour over it. Stir in the rest of the milk and cream cheese except for 2 tablespoons and season with the spices. Simmer for 2-3 minutes and set aside.
Asparagus, Oil, Sauce
For the asparagus: Wash the asparagus, peel and cut into pieces 3 to 4 cm long. Cut off the woody ends. Heat the oil in a pan and sauté the asparagus pieces for 5 minutes. Then add the asparagus to the sauce and stir.
Chervil leaves, mountain cheese, asparagus sauce
Wash the chervil leaves, shake dry and chop finely. Then add to the asparagus sauce and stir. Finally, stir in the mountain cheese.
Ramekins, asparagus sauce, puff pastry, egg, milk, oven
Preheat the oven to 200 °C top/bottom heat or 180 °C for circulating air. Spread the asparagus sauce on the molds. Roll out the puff pastry and cut out 4 circles that are slightly larger in diameter than the molds. Place this over the ramekins as a lid and press down firmly over the edges. Mix the egg yolk with the milk and brush the lids with it. Bake in the oven for 15 to 20 minutes until golden brown.
